Terroir:
Kimmeridgian. Left Bank. Hard limestone in a clay base, relatively deep soil with a browny red appearance.
Grape:
100% Chardonnay.
Average of the vine:
30 years.
Vinification
With no added yeast, long fermentation using natural yeast, in temperature-regulated tank. Spontaneous malolactic fermentation.
Maturing
On fine lees, only in stainless steel tanks, with as little manipulation as possible, during 12 months minimum. Long stabilisation at moderated low temperatures. Fining if necessary using bentonite. One light filtration is performed before bottling.

The 2013 Chablis Vaillons is bright, punchy and expressive. White flowers, green pear and lemon oil jump from the glass as this expressive, wonderfully nuanced wine shows off its class and personality. The hugely appealing finish is all about direction, energy and focus.
