Folonomo – the name is an abbreviation of ‘for love, not money’ – is kicking off its 2018 Chef Series with a dinner teaming up wines from Chalmers with the food of My Kitchen Rules stars Josh and Nic Sama of Fritto + Co.
The menu draws on Josh and Nic’s passion for cooking locally, seasonably and sustainably – and will be served with their signature Calabrian charm. “We want guests to taste a little of our tradition and our upbringing, but also flirt with some of the flavours we have developed through our journeys and experiences.”
These dishes will be paired with a range of Montevecchio and Chalmers wines grown by the Chalmers family – pioneer of so-called alternative varieties in Australia – on their vineyard in Heathcote.
100% of the profits from the evening will be donated to charity – Bart’s choice, Royal Flying Doctor Service, and Josh and Nic’s elected cause, The Starlight Foundation

Saffron milk cap + porcini mushroom arancini w/ a citrus aioli.

Cured beef carpaccio w/ parmigiano and a horseradish and mustard aioli
Hot entrée
Artichokes two ways: Stuffed with pancetta and herbed breadcrumbs and akso crispy fried Jerusalem artichokes.

Port braised rabbit w/ winter mushrooms & caramelised chestnuts, served on truffle polenta + roasted vegetables
