2018 Shadowfax Minnow Roussanne
Shadowfax
The fruit was gently whole-bunch pressed and left to settle over night prior to racking. The primary ferment was fermented at cooler temperatures to retain fruit aromas. After primary ferment it was gravity fed into older French hogshead barrels in our underground cellar for further maturing. It was left on light lees to develop further complexity for 6 months prior to bottling in early December 2018. Alcohol 13.6%; pH 3.20; TA 5.5g/L; RS 0g/L. Drink now through summer 2018/19 - Alistair Timms, Shadowfax

Pale straw in colour, highly textural, well flavoured and polished. Classy with a capital C. Stone fruit and saline notes lend this just the right mix of fruitiness and savouriness. Length isn't a problem.

Straight off the bat an easy wine to get into, albeit relatively simple in its make up. It’s got nashi pear and grassy scents going on alongide talc and fresh linen. Palate has some generosity but freshness, a smoothness, more of the nashi pear character and a light sage-like herbal note. Quite lovely actually.
